Fondant has come a long way over the years and is not to be confused with old fashioned almond marzipan. 

Fondant is a sweet, Marshmellow tasting icing, which is applied over a chocolate ganache layer.

What i love about fondant is the versatility, you can create super smooth finishes, ruffles, waves, fur, textures, etc and you can paint and air brush fondant!

Fondant is ideal for creating all the little details on novelty cakes and creating elegant wedding cakes.
